VARIETAL DESCRIPTIONS
CHARDONNAY:
(Monterey County) The El Camino Real Vineyard in the Arroyo Seco region of cool Monterey County, produces a wine with an array of ripe fruit aromas, including citrus, guava, and orange peel, finishing delightfully crisp and lingering.

Total El Camino Real Chard availability is only 175 gallons!
CABERNET SAUVIGNON (Lower Paso Robles): Located in the Templeton Gap with its cooler climate and rare chalky soil, is Sarzotti Vineyard & Winery. These grapes retain the elegant and elusive varietal character that is usually cooked out in warmer micro-climates. Your wine should be rich, with lingering flavors and lovely dark cherry/violet/coffee highlights.

(The Templeton Gap -- a high-walled wind channel that is also the route of Highway 46 West. Templeton Gap winds reach far into the east side of lower Paso Robles, bringing cool oceanic influence and moisture into areas that would otherwise be sheltered by a madman’s maze of stone)
New Vineyard! MALBEC (Upper Paso Robles): From Solana Farms in Paso's north-east rolling hills, come our unique Malbec grapes. Considered one of the traditional "Bordeaux varietals" it would be terrific blended with our Cabernet Sauvignon and/or Merlot. Expect an intense, inky red wine with ample tannin and possessing plum-like and blackberry flavors. Made by itself, it is dark, rustic, full and soft, with earth tobacco aromas.

Total Solana Malbec availability is only 1 ton!
New Vineyard! MERLOT (Lower Paso Robles): From Paso's Templeton Gap, comes our Pomar Junction Vineyard, Block 3, Merlot. Pomar Junction Vineyard is the Merrill family's estate vineyard in Templeton. The vineyard is located at the "junction" of El Pomar and South El Pomar Drives, in the El Pomar District of the Paso Robles viticultural appellation. The low tonnage per acre, the chalky soils, the Gap's cool climate should give you a wine rich in flavor, with a distinct varietal character and a pleasing drinkability.

Total Pomar Junction Merlot availability is only 2 tons!
MOURVÈDRE (Lower Paso Robles): A very limited offering from the Brohaugh Vineyard in Paso's Templeton Gap. Due to the Gap's cooler climate and rare chalky soil, this Mourvedre will be very successful in Rhone-style blends, softening and adding earth, spice, red fruit, structure and ageability to any of our Syrah selections. Mourvèdre is also rich and wonderful as a single-varietal wine.

New Vineyard! PETIT VERDOT (Upper Paso Robles): From Solana Farms in Paso's north-east rolling hills, Petit Verdot produces wines that are very rich, deep colored, having an exotic floral and spicy perfume and a strong tannin structure. One of the traditional "Bordeaux varietals" it would be terrific blended with our Cabernet Sauvignon and/or Merlot. Or, make it as a stand alone rich red wine.

SANGIOVESE (Santa Barbara County): Be a Chianti Caballero with these, the principle
grapes for Italy's great Tuscan reds. These wines are easy to like with a
lush, unpretentious, spicy and inviting quality
and have become our most popular variety. A Super dark clone from
White Hawk Vineyards, Cat Canyon, between Santa Ynez and Santa
Maria.

SYRAH (Paso
Robles): For all you Rhone Rangers.
This exceptional grapes comes from the
Brohaugh
Vineyard
in Paso's Templeton Gap. With the
gap's
cooler climate and rare chalky soil,
expect your wine to be
velvety with distinct varietal fruitiness and lingering elegance. Also, try blending with the Mourvedre.

100% Premiere Coastal Partners Syrah 2007
The Grand Champion wine medal was the top overall scoring wine of 4,474 entries across all categories.
Expect this quality from this "Premiere Coastal Partners" vineyard.
Located in the gentle rolling hills above the cool Los Alamos Valley, a mere 1/2 mile away from our White Hawk Sangiovese vineyard. This special, low yield, reserve block, has the same vineyard manager; same sunny hillside exposure; same sandy well-drained soil; same long, slow growing season as White Hawk. This is exceptional, refined fruit for making wine with velvet-like tannins, max intensity of blackberry/blueberry fruit, and a rich lingering mouthfeel.

New Vineyard! WESTSIDE ZINFANDEL: (Lower Paso Robles) From the renowned Whale Rock Vineyard , Block Z, on Bethel Road, Westside Paso Robles, comes a superb example of the Westside's most famous grape. Expect rich, velvety flavors of dark cherries, blackberries, plums and black pepper spice.

These dates are just guesses, based on last year's harvest. Do not plan your life around these dates. Harvest time can speed up or slow down due to any number of variables.

Rain and/or cool weather will slow things down.
So, don't plan your vacation around these dates.
These are only guesses at this time.

as we get closer to harvest.

Remember, you or someone/team appointed by you, must be at the
winery when the grapes are there. At the appointment time.
Get your equipment well before harvest time.

RULES OF THE HARVEST!
You, or your replacement, must be here when the grapes are here!
No refunds except in the event of a natural disaster!
Cancellation only until one week before harvest!
If you are going to be out of town, be sure to have a team/someone ready to pick up and process your order!
This is not a big deal. They just need to bring your container for the crushed grapes or Chardonnay juice. There's always plenty of hands available to help.

Plan to pay your balance when the grapes arrive.
Checks, charges, or exact cash.
This usually means a weekday. Late afternoon, early evening, and early the next day. We highly suggest that you make the effort needed to fit this schedule!
Grapes not crushed by you when they arrive, will be crushed, sulfited, acidified, and put into the walk-in for your pick-up on the following Sunday AM. They will have to be bucketed, by you, from our bins into your fermenter and weighed. This is only a labor disadvantage.
All grapes and juice will be processed, by you and your team,
at The Daume Winery ("Camarillo Custom Crush") in Camarillo.
All fermented must can be pressed, by you and your team, here,
at The The Home Beer/Wine/Cheesemaking Shop in Woodland Hills.
We'll E-MAIL you with the crush times, the moment
the grower calls us.
You must respond that you
have been notified and will be there during the crush times.

It is your responsibility to know when the grapes are due to arrive and to be there during the crush time!
Please call us as often as possible, at least once a week, as it gets close to harvest, since the grower only knows a few days ahead of the harvest date. After the end of August, Tuesday, after 4:00, is the best time (818-884-8586
It's expected that you will arrive promptly at your appointment time!
Plan to relax and enjoy yourself.
Help out those winemakers before you.
Then stay and help the newer ones.
It's a lot more fun this way and we all can use the help.
Absolutely No Lines. We'll get you in and out as fast as possible. Only one person or group of friends can go at a time.
Pick up the handouts. Enjoy and share the wine and snacks that you've brought. Socialize. Pitch in and help each other.
When called forward, pay off your order (check/exact cash/charge); pick up your specialized yeast and M-L culture (one empty wine bottle/100 lbs is needed) and step-by-step instructions.
Then, using our commercial de-stemmer, process your red grapes.
You'll need one 20 gallon food grade, extra strong bucket per each 150 lbs grapes.
Or, pick up your white juice.
Add SO2 and adjust pH, as instructed.. and, smiling, head for home.
When your grapes are ready to press, bring them to The Shop in Woodland Hills. The use of our big press, by you, is part of the price.
Get your equipment now! Do not wait until its sold out.
There will not be any equipment to sell at The Daume Winery.
